Recipe: Damson and sloe gin conserve Eton mess

Eton mess is a classic British dessert, dating back to the late 1800s. Fresh fruit, crunchy meringue with a chewy centre and whipped cream come together to create a Summer fine dining staple.

Today, our Baxters Innovation Chef and Culinary Lead, Darren Sivewright, has put a Scottish twist on the traditional dessert, using juicy ripe plums and our Limited Edition Damson & Sloe Gin Conserve, handcrafted with care in Fochabers by Baxters.

 Ingredients:

  • 1 jar of Baxters Limited Edition Damson & Sloe Gin Conserve
  • 4 ripe plums
  • 500ml of double cream
  • 50g of icing sugar
  • 4 meringue nests
  • 50g of toasted flaked almonds

How to Make:

  1. First, stone and quarter the plums.
  2. Then, crush the meringues roughly taking care not to crush too finely.
  3. Thirdly, 3/4 whip the double cream and icing sugar and proceed to fold in the plums, 1/2 to 3/4 of the Baxters Limited Edition Damson & Sloe Gin Conserve and meringue.
  4. Finally, spoon into glasses to serve and finish with a sprinkle of toasted almonds.
